Anemic? Hoo hoo , good one FF.

I will agree you always need some ballast to float your boat better, just that we prefer to add weight by keeping some of the LMB we catch in order to help ours float.

Rolling Eyes I have never seen a crew that looked as happy and full of themselfves as in the pictures I just saw. About broke my heart. Really I am happy that you all had a great time and from the looks of it you did and I am going to try my dangest to get up there next year. Only thing I didn't see was any fish Shocked what you all do stay in the bar most the time Laughing I just got my computor back up and running after it got hit by lighting about 30 days ago. Had to basically gut it and lost alot of stuff and been racking what brains I have left trying to remember what is what. Then my buddy went and threw a new operating system in it and now I'm really lost. Laughing Give me a couple days and I might figure some of it out. Jerry got a couple of new sause recipes from the new restaurant at Harrah's and thier a kick. Am waiting to get the last one I tried the other night before I post them tho. One is a Honey Onion Buffalo Sause that will knock your socks off.. the other is a Mango Sweet and Sour that I tried over some crappie and its to die for. Glad you all had a great and safe trip.

sorry guys but haven't got the asian one yet but here are the other two, Both of these should make 6 quarts
Honey Onion Buffalo Sause
1 Qt. Katchup
2 Qt. Wingers Sause Hot Sause or any other brand Like Uncle Douggies hot wing suace
1/2 Cup Apple Cider Vingar
1 cup Molasses
1 Qt Honey
6 To 8 Cloves of Garlic chopped fine
1 Lb of Butter,(not Oleo, real butter)
1/2 Lb Onion Chopped
2 Tablespoons Cajun Seasoning
3Tablespoons Cayenne Pepper

1. Cook the onion in the butter until caramelized.
2. Add the garlic and cook for one minute any more it will turn bitter.
3. aadd the remaining ingredients and remover from heat.
4. puree with burr mixer or food processer or any mixer until smooth and emulsified,( without lumps).

Mango Sweet and Sour
(Now I started with six mangos but had to add 2 more it was just for my taste tho.)

4 Kg Mango Puree
2 Qt rice wine vinegar
1 Qt of sugar
1 cup lime juice
2 tablespoons Cayenne Pepper
1/3 cup Cornstarch

Place all ingredients in sauce pot,(minus cornstarch) and bring up to a simmer.
Add enough water to the conrnstarch to make a slurry
Add Slurry to mixture and simmer for 15-20 minutes.
Cool down and serve chilled.

The Honey Onion is great on wings. let them marinaide for about 2 hours in some of it then bake as usuall. its also great over any kind of meat even had some on some crappie and it was great.

Same goes with the mango but it was espically good on fish. E

I had the wings agian last night and when I got home I noticed that Scott had the girls put a couple extra one in my bag so God Bless his little pea picken heart. I also the the szcehwan Sause recipe froom him in a e-mail yesterday so here it is. now the first ingredient might be a little tough to find but but if you can find a orential grocery shop in your area they should have it. so good luck./
This makes a little better than a gallon or you can cut the recipe to fit what ever you want to make.
1 gal Sweet chili sause (Mae poy brand)
3 cups of lime Juice
Zest of one lime
! cup Rice wine vinegar
!cup Chopped mint
1/2 cup Chopped Cilantro

Put all in bowl and whisk together can be served chilled or over hot food.
This is one great tasting sause not hot at all but tangy/

Ow, Ow, Ow, my head is starting to hurt, I'm getting an idea. I think we should have a 10 x 12 glossy made of our group picture, frame it, and give it to the Pike Hole to hang on the wall. What do you guys think?
